KADAYIFLI MUHALLEBI


KADAYIFLI MUHALLEBİ 
(“vanilla pudding” with kadaif)

INGREDIENTS: 

FOR THE KADAIF LAYER: 
250 g shredded kadaif pastry
60 g butter
4 tablespoons sugar
1 cup coarsely ground walnuts

FOR THE PUDDING (MUHALLEBI):
1 liter milk
3 tablespoons flour
3 tablespoons cornstarch
2,5dl sugar (sweeten to your liking but remember cream will be added)
200 ml cream
2 teaspoons of vanilla

INSTRUCTIONS:

1. First, cut the shredded kadaif into small pieces.
2. Melt the butter in a large pan.
3. Add the chopped kadaif and sugar to the melted butter.
4. Roast over medium heat, stirring constantly, until golden brown.
5. Add the walnuts and continue to roast for another 5 minutes. Set aside.
(I had it stored and took it out before starting the recipe, therefore it was not recorded)

Prepare the pudding:
1. In a pot, combine the milk, flour, cornstarch, and sugar. Mix well until smooth.
2. Place over medium heat and cook, stirring continuously, until the mixture thickens and starts to bubble.
3. Remove from heat, cover, and let it cool.
4. Once cooled, add the cream and vanilla. Beat with a mixer until smooth and creamy.

Assemble the dessert:
1. Spoon a layer of pudding into the bottom of your serving glasses.
2. Add a layer of the roasted kadaif on top.
3. Repeat the layers (pudding, then kadaif) and decorate with leftover kadaif and/ or your favorite fruit.

SERVE:
Let the desserts rest in the refrigerator for 2–3 hours before serving.
